Grown in Taichung, Taiwan, this Honey Black Tea is hand-harvested and fully oxidized. Its distinct sweetness comes from the natural activity of leafhoppers, which nibble the leaves and trigger a transformation that enhances aroma and flavour, creating its signature honeyed character.
This tea brews into a vibrant ruby-red liquor with golden highlights and a silky texture. Rich notes of wild honey, raisin, and malt are balanced by a hint of cinnamon and a soft floral undertone, finishing smooth and comforting.
Bold, smooth, and naturally sweet, Honey Black Tea is a full-bodied cup with warm, lingering complexity. A beautiful example of leafhopper-bitten craftsmanship, perfect for those seeking richness with a gentle, aromatic finish.
Brewing Recommendations:
Western:
2 g | 250 ml | 90-95°C (195-203°F) | 3-4 min
Gongfu:
4 g | 100 ml | 90-95°C (195-203°F) | 20–30 sec (1st), +10 sec
Cold Brewing:
5 g | 500 ml | 8 - 24 hours in the refrigerator
Notes:
Western Brewing:
Longer steep times, fewer infusions (1-2).
Gongfu Cha:
Short steeps with multiple infusions (5-8+) Increase steeping time gradually.
Cold Brewing:
Long steep times in the refrigerator, fewer infusions (1-2).
